Old September Cheese is an artisanal farmhouse cheese, made from 100% farm-fresh cow’s milk. This milk comes from cows that enjoyed the last tender summer grass in September. The cheese is thermized – a gentle heat treatment that makes the milk safe while fully preserving its pure, full-bodied, and very creamy character.
The cheese then ages for 12 months on wooden boards, developing its rich flavor. During this process, small, emerging crystals form, a sign of quality and maturation, giving a subtle, slightly crunchy bite.
