    Farmer's cheese is made on the farm in a completely traditional way. For example, farmer's cheese is never pasteurized and this provides a typical taste that so many people love.

    Difference between farm cheese, thermized cheese and pasteurized cheese?

    Farm cheese, thermized cheese and pasteurized cheese differ mainly in how the milk is heated, which affects the taste and safety.

    • Farm cheese is made from raw milk, directly on the farm. The milk is not heated, which gives the cheese a strong, pure taste. Due to the use of raw milk, this cheese is less suitable for pregnant women or people with weakened immune systems.
    • Thermized cheese is made from milk that has been slightly heated. This preserves many flavors, but harmful bacteria are largely eliminated. The result is a rich, slightly safer cheese with an artisanal taste.
    • Pasteurized cheese is made from milk that has been heated to at least 72 °C. This makes the cheese safe for everyone, with a soft and mild taste. Ideal for people who do not want to take any risks.

    In short: farm cheese is strong and traditional, thermized cheese is tasty and artisanal, and pasteurized cheese is safe and accessible.

    What do the numbers on the farmer's cheese mean?

    Kaas & Borrelz uses the Erfgoed Stelling brand. The numbers on the cheeses (Heritage Stelling 103 / Heritage Stelling 705) indicate where the cheese comes from and what type. For example, the cheese from the 100 series comes from a different farm than the 700 series. Heritage Stellingkaas is considered cultural heritage, because the cheese is often produced in a way that passes from generation to generation and is part of local traditions and cultures.

    Use of farmer's cheese

    Due to its unique taste, the use of farmer's cheese is versatile. An extra-mature farmer's cheese fits perfectly on the snack board between a Gouda extra-mature cheese, because the structure and taste are so different. You can also replace the traditional Gouda cheese with farmer's cheese for a different taste experience, such as on bread or crackers or with Quesadillas.

    How do we ship farm cheese?

    We always have the cheese delivered by PostNL or DPD. We always cut the cheese fresh and then vacuum-pack the pieces. The advantage of this is that the cheese is then stored in an airtight environment. This stops the ripening process and prevents mold formation and dehydration.
