    Farm cheese, thermized cheese and pasteurized cheese differ mainly in how the milk is heated, which affects the taste and safety.

    • Farm cheese is made from raw milk, directly on the farm. The milk is not heated, which gives the cheese a strong, pure taste. Due to the use of raw milk, this cheese is less suitable for pregnant women or people with weakened immune systems.
    • Thermized cheese is made from milk that has been slightly heated. This preserves many flavors, but harmful bacteria are largely eliminated. The result is a rich, slightly safer cheese with an artisanal taste.
    • Pasteurized cheese is made from milk that has been heated to at least 72 °C. This makes the cheese safe for everyone, with a soft and mild taste. Ideal for people who do not want to take any risks.

    What do the numbers on the farmer's cheese mean?

    Kaas & Borrelz uses the Erfgoed Stelling brand. The numbers on the cheeses (Heritage Stelling 103 / Heritage Stelling 705) indicate where the cheese comes from and what type. For example, the cheese from the 100 series comes from a different farm than the 700 series. Heritage Stellingkaas is considered cultural heritage, because the cheese is often produced in a way that passes from generation to generation and is part of local traditions and cultures.

    Use of farmer's cheese

    We always have the cheese delivered by PostNL or DPD. We always cut the cheese fresh and then vacuum-pack the pieces.
